Fig and Pea Protein Bars
I started doing Crossfit about 2 months ago, and with the new health regime, my nutritional needs have changed to include a lot more protein for muscle recovery. I have used 100% organic ingredients, but you can just get what you can get your hands on within your budget.
- 1 1/4 cup of rolled oats
- 1 cup of loosely packed organic pea protein powder
- 1 cup of tightly packed organic dried figs
- 3 tbsp of water
- Zest of 1 lemon

Chocolate-Banana Smoothie with Medjool Dates
How do you avoid eating something that’s bad for you the morning? Make your breakfasts interesting and full of flavor. Fruity and tart one day, spicy and earthy another. Today I’ll share an original smoothie recipe with you. Enjoy!
SERVINGS 2
- 1 ripe medium banana
- 4 medjool dates, pitted
- 1 tsp of cocoa or dark chocolate powder
- 5 tbps of plain unsweetened yogurt
- 1 cup of soy, almond or rice milk
- 1-2 tbps of whey protein powder
- 1/2 tsp of cinnamon powder
- 2-3 cubes of ice
- 1 tbsp of LSA (linseed and almond meal) (for taste and omega-3)
Instructions
Just add all the ingredients in a blender, control the consistency of the smoothie with the non-dairy milk, and once it’s all blended, enjoy your earthy smoothy for the fall.Cinnamon – Helps to regulate blood sugar, lowers cholesterol, and helps with yeast infections (among other benefits).
Chocolate – You have heard that moderate amounts of dark chocolate is good for your heart, but now there are studies done in the field of neurology that is pointing to the chocolate-brain health connection.
Medjool Dates – They are mostly carbs, but these are high in potassium, which helps in regulating your electrolyte levels.

Zucchini Noodles with Cherry Tomatoes

If you live at a place where Zucchinis aren’t throat-cuttingly expensive, here’s a recipe that will help speed up your metabolism and also give you that almost pasta/noodle-like effect without all the gluten and grain in there. It’s Paleo-friendly, low-calorie, and very healthy; an all around wonderful quick-recipe for busy people with busy lives.
Zucchini Noodles with Cherry Tomatoes
Serves 1
Prep & cooking time: 15 minutes
2 medium zucchinis, grated into thin strips (with skin on)
2 tbsp of chopped fresh garlic
1 cup cherry tomatoes, halved
1 tbsp extra-virgin olive oil
1/2 tsp of dried mixed herbs
1-2 tablespoon of tomato paste
salt and black pepper to taste
sprinkle of sunflower seeds or pine nutsInstructions
Heat a large pan until hot, then add your olive oil. When the oil begins to smoke, add your chopped garlic and fry till golden brown. Then add your zucchini strings, herbs, salt, and continue frying at high heat. Put in your tomato paste, and mix thoroughly. After about 30 seconds, add your cherry tomatoes and continue stir-frying. Remove from heat after 3 minutes and serve with a pine of sunflower seeds or pine nuts.Tip: Use a regular cheese grater instead of a Japanese grater for thicker, spaghetti-like noodles.

Recipe: ‘Leon-Inspired’ Superfoods Coleslaw
When I was living in London, I used to love this healthy fast food chain called Leon.
They serve low GL, low saturated fat, wheat free, dairy free, gluten free and vegetarian options.
More than anything, I loved their Salsa Verde Grilled Chicken, which they served with brown rice and a healthy coleslaw that uses plain yogurt instead of mayonnaise for the dressing.
Brilliant idea isn’t it? The rich-creamy taste without the calories, sugar and oil. Plus you get your serving of probiotics!
I loved it so much I’d have it once a week. Now that I’m not in London anymore, the only coleslaw I can get here are the mayonnaise-laden, super-sweet variety and I hate it because it’s so rich and sweet it makes me barf. So unless I make it myself, I’m doomed to a life of bad coleslaw.
Thankfully, I was blessed with a bit of culinary know-how, so made an organic super foods version of it myself.
I personally think it tastes a lot better than Leon’s original slaw because I have given it a garlicky twist, used organic vegetables and grated them using Japanese graters (which yields a much thinner and finer cut, making it easier and more pleasant on the jaws).
I’ve also added pumpkin seeds and raisins to give it some nutty and tart character. Try to use organic ingredients, it makes a difference!
Jackie’s ‘Leon-inspired’ Super Slaw Recipe
Ingredients
- 3 cups of grated red cabbage
- 1 carrot, grated into thin strips
- 1/2 medium onion, sliced thinly (optional)
- 3 heaping tablespoons of plain yogurt
- 1 pip of minced garlic
- 2 ounces of pumpkin seeds
- 2 ounces of raisins
- Salt and black pepper to taste
Instructions
Grate your vegetables and put all the ingredients in a mixing bowl. Mix well and serve immediately or within the hour. Tip: If it gets a bit thick, just add some drinking water to loosen it up.P/S: Some people don’t like raw onions, so if you’re one of them you can leave it out. It goes really well with chicken!
