{"id":549,"date":"2012-11-09T13:41:20","date_gmt":"2012-11-09T05:41:20","guid":{"rendered":"http:\/\/www.lifebod.com\/?p=549"},"modified":"2012-11-09T13:41:20","modified_gmt":"2012-11-09T05:41:20","slug":"jackies-leon-inspired-super-slaw-recipe","status":"publish","type":"post","link":"https:\/\/lifebod.com\/index.php\/2012\/11\/09\/jackies-leon-inspired-super-slaw-recipe\/","title":{"rendered":"Recipe: &#8216;Leon-Inspired&#8217; Superfoods Coleslaw"},"content":{"rendered":"<p>When I was living in London, I used to love this healthy fast food chain called <a href=\"http:\/\/www.leonrestaurants.co.uk\/\">Leon<\/a>.<br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"alignleft\" src=\"http:\/\/farm4.static.flickr.com\/3651\/3415090120_3cc78369b2.jpg\" alt=\"\" width=\"350\" height=\"234\" \/><\/p>\n<p>They serve low GL, low saturated fat, wheat free, dairy free, gluten free and vegetarian options. <\/p>\n<p>More than anything, I loved their Salsa Verde Grilled Chicken, which they served with brown rice and a healthy coleslaw that uses plain yogurt instead of mayonnaise for the dressing.<\/p>\n<p>Brilliant idea isn&#8217;t it? The rich-creamy taste without the calories, sugar and oil. Plus you get your serving of probiotics!<\/p>\n<p>I loved it so much I&#8217;d have it once a week. Now that I&#8217;m not in London anymore, the only coleslaw I can get here are the mayonnaise-laden, super-sweet variety and I hate it because it&#8217;s so rich and sweet it makes me barf. So unless I make it myself, I&#8217;m doomed to a life of bad coleslaw.<\/p>\n<h3>Thankfully, I was blessed with a bit of culinary know-how, so made an organic super foods version of it myself.<\/h3>\n<p>I personally think it tastes a lot better than Leon&#8217;s original slaw because I have given it a garlicky twist, used organic vegetables and grated them using Japanese graters (which yields a much thinner and finer cut, making it easier and more pleasant on the jaws).<\/p>\n<p>I&#8217;ve also added pumpkin seeds and raisins to give it some nutty and tart character. Try to use organic ingredients, it makes a difference!<\/p>\n<h2>Jackie&#8217;s &#8216;Leon-inspired&#8217; Super Slaw Recipe<\/H2><br \/>\n<a href=\"http:\/\/www.lifebod.com\/wp-content\/uploads\/2012\/11\/lifebodsuperslaw.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-553\" title=\"lifebodsuperslaw\" src=\"http:\/\/www.lifebod.com\/wp-content\/uploads\/2012\/11\/lifebodsuperslaw.jpg\" alt=\"\" width=\"640\" height=\"465\" \/><\/a><\/p>\n<h3>Ingredients<\/H3><br \/>\n<UL><br \/>\n<LI>3 cups of grated red cabbage<\/LI><br \/>\n<LI>1 carrot, grated into thin strips<\/LI><br \/>\n<LI>1\/2 medium onion, sliced thinly (optional)<\/LI><br \/>\n<LI>3 heaping tablespoons of plain yogurt<\/LI><br \/>\n<LI>1 pip of minced garlic<\/LI><br \/>\n<LI>2 ounces of pumpkin seeds<\/LI><br \/>\n<LI>2 ounces of raisins<\/LI><br \/>\n<LI>Salt and black pepper to taste<\/LI><\/p>\n<h3>Instructions<\/H3><br \/>\nGrate your vegetables and put all the ingredients in a mixing bowl. Mix well and serve immediately or within the hour. Tip: If it gets a bit thick, just add some drinking water to loosen it up.<\/p>\n<p>P\/S: Some people don&#8217;t like raw onions, so if you&#8217;re one of them you can leave it out.
